Ramen chain turns bamboo problem into tasty topping

KYOTO, Japan >> A ramen restaurant chain based in Kyoto prefecture has launched a project to source abandoned bamboo forests to make menma — a common topping for ramen. The endeavor is also tackling a local issue.
