Where do you want your ahi to come from? You may not realize the tuna in your poke bowl is increasingly dominated by imported, previously frozen and gas-treated fish — often injected with coloring agents and preservatives to maintain that fresh-looking red. Alarmingly, it may even be labeled “locally made” or “freshly prepared.”
